Flavour Profile
Tasting Notes: This is big bright juicy apricot on the nose with floral, funky undertones. Juicy stone fruit on the palate with hints of almond skin, hay, and a touch of oak. Lively acidity and soft, spritzy bubbles lead to a dry, refreshing finish.
Process
A blend of 1, 2 and 3 year old golden ales brewed with malted barley and raw wheat. Spontaneously fermented and matured in neutral French oak barrels.
Refermented on Sunny Cot apricots grown by a family run farm on the Isle of Wight.
Conditioning
Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process.
Bottles laid to rest on their sides and conditioned until release.
