Flavour Profile
Tasting Notes: Refermentation on UK grown Pinot grape pomace brings citrus peel, red berry and bright acidity, with soft floral notes and a clear wild character from the barrel aged beer beneath.
The finish is complex and bone dry, shaped by oak, time and delicate natural carbonation. It is bright, layered and expressive, with the grape character adding depth without sweetness.
Process
A blend of 1, 2 and 3 year old golden ales brewed with malted barley and raw wheat. Spontaneously fermented and aged in neutral French oak barrels.
Refermented on grape pomace made up of Pinot Meunier, Pinot Noir and Pinot Blanc. All grown in the UK.
Conditioning
Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process.
Bottles laid to rest on their sides and conditioned until release.

We will ship via DHL’s next day service on a day specified prior to the release of the beer.
