Honey Isle 2023

Process: A blend of 1, 2 and 3 year old golden ales brewed with malted barley and raw wheat. Spontaneously fermented and matured in neutral French oak barrels. Refermented on Honeyberries grown on a farm near Dundee, Scotland.

Conditioning: Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process. Bottles laid to rest on their sides and conditioned until release.

Tasting Notes: Juicy blueberry on the nose with hints of blackberry, blackcurrant and wild funk. Candied blueberry dominates the palate, balanced by further notes of earthy blackberry, jammy raspberry, and Ribena-like blackcurrant. Tangy acidity and fine bubbles lead to a dry finish.
